Yummy Fish

Yummy fish is a healthy fish dish. It has a crunchy topping. Very simple to make and very yummy. It's even a hit with my next door neighbour's kids and they can't stand fish!
Prep:15m Cook:15m Servings:6

Ingredients
5 x slices of wholemeal bread
Fish required
6 – 8 Fish Fillets (such as Basa, Snapper – whatever takes your fancy).
For the topping
2 tablespoons of Lemon juice
Rind of one lemon
2 tablespoons of Oil
1 tablespoon of Parsley
1 tablespoon of Coriander

Directions
1-.Preheat your Oven to 180 degrees celcius.
2-.In a food processor (using the chopping blade), place inside the bread, parsley, Coriander and lemon rind
3-.Turn it on for a few seconds to chop the bread up. Do this a few times until the pieces of bread are still coarse.
4-.Place the lemon juice and the oil into the food processor.
5-.Repeat step three until the bread crumbs are still of a coarse texture however, are soft and fluffy.
6-.Line the fish on some baking paper on baking trays. Spray the tray before placing down the baking paper.
7-.Using your hands (or a spoon), start putting the mixture on top of the fish, one piece at a time. Make sure that it is done evenly. Press the mixture onto the fish so that it is firm.
8-.Place into the oven for 15 – 20 minutes.
9-.Serve with a slice of lemon, some Salad and if you’d like, some warm wholemeal rolls.
10-.Yummy!
