Spicy Fish

Instead of the normal dry spicy fish dish, I make this with a bit of sauce, just like those in the bah kut teh shop.
Prep:20m Cook:20m Servings:2

Ingredients
200g of fish, cut to cubes
1" ginger, sliced to thin pieces
1 bunch of dried chilli (cut and soaked to remove seed)
2 shallots (chopped)
5 pieces of garlic (chopped)
1 teaspoon of oil
1 teaspoon of fish sauce
1 pinch of salt
1 pinch of pepper
1/2 cup of water
2 tablespoon of cornstarch mixture (for thickening)
1 tablespoon of sweet soy sauce
1 tablespoon of soy sauce
1 tablespoon of Thai Chilli Paste
1 teaspoon of brown sugar
1 teaspoon of sesame oil

Directions
1-.Marinate fish with salt, pepper, fish sauce and sesame oil for about 1 hr.
2-.Heat up the oil and saute shallot. Add in garlic, ginger and dry chilli.
3-.Add in fish and fry for about a minute.
4-.Add in water, soy sauce and sweet soy sauce, thai chilli paste and cook at low fire.
5-.After 4 minustes, add in brown sugar, stir and dish to serve.
