The generic asian staple, fish balls are kinda like meatballs, but with a much lighter and in many ways more pleasant feeling.

Ingredients
2 lb. freshwater fish, includes bone and skin
8 oz. roasted almonds
4 oz ham -optional
1 egg
2 Tbsp cornflour
1 tsp salt
Oil
Directions
1-.Bone and skin the fish.
2-.Mince the meat and cut the almonds and ham into small pieces
3-.Put the minced fish in a deep bowl, add the egg, flour and salt.
4-.Mix thoroughly.
5-.Add the ham and almonds.
6-.Shape into small balls.
7-.Cook briefly in boiling salted water.
8-.They are ready as soon as they float to the surface.
9-.Serve very hot lightly sprinkled with good sesame/extra-virgin olive oil
